How to Cook When the Power Is Out for a Week

A day without power is an inconvenience. Three days is a project. A week changes how you think about your kitchen, because by then you've used up the easy answers and you're making real decisions about food you paid for and can't replace.

Most outage advice stops at "have a camp stove." That's the beginning of a plan, not a plan. Here's a practical look at how the week actually unfolds and what to do at each stage.

Hours 0 to 4: the most important thing you can do is nothing

Keep the refrigerator door closed.

USDA guidance is that a closed refrigerator holds food safely for about four hours. A full freezer holds for about 48 hours; a half-full freezer for about 24. Those numbers assume the door stays shut. Every time you open it to check, you're spending part of that budget, and you don't get it back.

Decide what you need, get it out in one trip, and close the door. Put an appliance thermometer in the fridge if you don't already have one, so that later in the week you're making decisions based on a number instead of a guess. Above 40°F for more than two hours and perishables are done.

If you get any warning at all, a hurricane forecast or a winter storm watch, fill your empty freezer space with jugs of water beforehand. Frozen water is thermal mass. A full freezer holds cold roughly twice as long as a half-empty one, and you end up with drinking water when it thaws.

Day 1: eat the freezer, in order

Work from most perishable to least: fresh fish and ground meat, then poultry, then steaks and roasts, then anything already cooked, then vegetables and bread.

This is the day to cook big. If you're going to lose that meat anyway, turn it into meals now while it's still good. Cooked food holds up meaningfully better than raw at the same temperature, and a pot of finished chili sitting at 50°F is in far better shape than the raw ground beef it came from.

This is also the day to be generous. Feed your neighbors, especially the ones with less freezer capacity. It comes back around on day five.

Food safety tips for when the power is out

A significant share of storm deaths happen after the storm has passed, and carbon monoxide is a major reason.

Unintentional, non-fire carbon monoxide poisoning kills more than 400 people a year in the United States and sends roughly 20,000 more to emergency rooms. About 100 of those deaths come from portable generators specifically. In a CDC-based review of disaster-related CO poisonings, generators were the exposure source in 83 percent of fatal cases, and about two thirds of those fatalities traced to the generator being placed indoors. Nearly 90 percent of fatal cases occurred within three days of the disaster, and 94 percent happened at home. Charcoal grills also show up repeatedly in winter storm deaths.

The rules are short and there are no exceptions worth making:

Never run a generator, grill, camp stove, or any fuel-burning device inside a house, garage, basement, tent, or camper. Not even with the garage door open, and not even for a few minutes. Generators go outside, well away from the building, and never near an open window or a window air conditioner.

Never bring a charcoal grill indoors. Charcoal produces carbon monoxide long after the visible flames are gone, which is exactly why it kills people who assume the danger passed.

Never heat your home with a gas oven or stovetop.

Put a battery-powered CO alarm where you sleep, and do it now rather than during the outage.

Days 2 and 3: the fuel math nobody does in advance

By now you're on stored fuel, and this is where most households find out their preparedness was theoretical.

A one pound propane cylinder gives a single-burner stove roughly one to two hours of high-output cooking. That sounds like plenty until you count actual meals. Coffee and oatmeal is fifteen minutes. A one-pot dinner for four is thirty to forty-five. You are going through a cylinder a day, and that's boiling and simmering only, with nothing baked and no long cooks.

A 20 pound tank on a two-burner camp stove puts you in a much better position, somewhere in the range of ten to twenty hours of two-burner time depending on how hard you run it. That's a real week if you're disciplined about it.

Do this arithmetic while the power is still on. Propane disappears from store shelves within hours of a serious forecast, and the stores can't run their registers during the outage anyway.

Days 4 through 7: change what you cook, not just how

The instinct is to keep cooking the way you normally cook, with less convenience. Resist it. Shift toward meals that use one pot, one heat source, and one round of cooking.

Dried beans and rice are the backbone of any long outage, and they carry a specific problem: they need long, low, steady heat, which is the single most fuel-expensive thing you can ask of a camp stove. Two techniques cut that dramatically.

Soak beans overnight. It roughly halves the cook time and costs you nothing but planning.

Use a pot cozy. Bring the pot to a hard boil, cover it, shut off the burner, then wrap the whole pot in towels and put it inside a closed cooler. Residual heat finishes the job over the next two to four hours. For beans, rice, grains, and stews, this one trick can cut fuel use by more than half, and it works with any pot you already own.

Lean on foods that need warming rather than cooking. Canned beans, canned soup, canned fish, and canned vegetables are all fully cooked already. Warming a can to eating temperature costs a fraction of what cooking from dry costs.

Water

If your water supply is under a boil notice, bring it to a rolling boil for one minute, or three minutes above 6,500 feet elevation.

Budget for this. A household boiling drinking and cooking water for a week burns a genuinely surprising amount of fuel, and it's the item most often left out of outage plans entirely.

The gap that's in every plan above

Read back through all of it and you'll notice a pattern. Every solution runs on something finite that you had to buy in advance. Propane runs out. Batteries run down. Generators need gasoline, which needs a working gas station, which needs electricity.

The one heat source that doesn't deplete is the one that shows up every clear morning.
