How Long Can Your Pantry Actually Last in a Blackout?

Do the actual count
Go to your pantry with a notebook and count only the items that meet all three of these tests:
- Shelf stable, meaning no refrigeration required
- Not expired
- You would actually eat it
That third filter matters. The can of water chestnuts from 2019 is not food, it's inventory.
Now estimate calories. You don't need to be precise; rough categories are enough:
- Can of beans: about 350 calories
- Can of soup: about 200 to 400
- Cup of dry rice: about 700
- Cup of dry pasta: about 400
- Cup of dry beans: about 700
- Two tablespoons of peanut butter: about 190
- Tablespoon of oil: about 120
Add it up. Divide by 2,000 calories per person per day.
Most American households land somewhere between four and ten days for one person, or two to five days for a family of four. Considerably less than people expect, and the gap between the number they guessed and the number they counted is usually a factor of two or three.
Calories aren't actually the constraint
Here's what the count misses. Even if you have three weeks of calories on paper, two other things will stop you well before you run out of food.
Can you cook it? Look back at your list. Rice, dried beans, pasta, oats, and lentils are almost certainly the bulk of your calories, and every one of them requires sustained heat. If your entire cooking capability is one small propane cylinder, your pantry's real duration is however long that cylinder lasts, not how many calories are on the shelf.
This is the single most common gap. People store food and don't store the ability to cook it.
Do you have water for it? Dried staples need water to cook, on top of drinking water. A cup of dry rice takes two cups of water. A pot of beans takes considerably more. If you're on stored water and under a boil notice, cooking from dry becomes expensive in two resources at once.
The three things that extend a pantry most
A manual can opener. Trivial, cheap, and constantly forgotten. Without one, every can in the house is sealed shut. Buy two, keep one in a drawer and one with your emergency supplies.
Fat and oil. Most pantries are heavy on carbohydrate and light on fat, which is the densest calorie source available and also what makes plain food edible for more than three days. A large bottle of cooking oil is roughly 8,000 calories, stores for a year or more, and takes up almost no space. It's the highest calorie-per-dollar-per-shelf-inch item you can buy.
A pot cozy. Bring a pot to a boil, cover it, kill the heat, and wrap the pot in towels inside a closed cooler. Residual heat finishes rice, beans, or grains over the next few hours. It costs nothing and it can more than double the number of meals you get from a given fuel supply.
A reasonable target
Two weeks of shelf-stable calories per person, with the ability to actually cook them, is a sensible goal for most households. That covers the overwhelming majority of real disruptions, and it's achievable by adding a few items to a normal grocery run over a couple of months rather than by buying a bucket of survival food.
Build it out of things you actually eat and rotate through, so it stays fresh and so the failure mode is that you ate your emergency rice and bought more, rather than that you're eating something unpleasant in a bad week.
Closing the cooking gap
Once you've done the count, the gap is usually obvious: plenty of dried staples, not much ability to cook them for very long.
You can close it by storing more fuel, and you should store some. But fuel is the part that gets used up, doesn't get replaced, and sells out first when anyone else needs it too.
